Fill a whole iceberg lettuce leaf with a tasty mix of egg, chives and low fat mayonnaise. Remember that products can only be labelled 'low fat if they contain less than 3g fat per 100g, so don't be fooled by the reduced fat labels which may still contain a lot of fat. This can be enjoyed on any of our diet solution plans, including the VLCD and LCD diets.
1 free range egg
1 tbsp low fat (3% fat) mayonnaise
1 tsp chives
1 iceberg lettuce leaf from a head of lettuce

This recipe is suitable for the following diets: Simple Solution (LCD), Total Solution (VLCD), Working Solution (LCD).
1. Hard boil the egg, and allow to cool.
2. Shell the egg and place in a bowl. Chop roughly with a knife then add the mayonnaise. Use a fork to mix together.
3. Stir in the chives and black pepper, then spoon into the lettuce leaf.
4. Enjoy your snack!
Serving suggestions: Use the egg mixture with celery sticks, or as a lower fat sandwich filling. You can also add more egg if you please, but this will increase the calorie content.
Storage: The egg mixture can be stored for 24 hours in an airtight container in the fridge but is not suitable for freezing.
