Baked sweet potato with Spiced baked beans

Why not try this twist on your favourite baked potato and baked beans. Sweet potatoes are very high in vitamin A, and the cumin and onion in the baked beans turn the ordinary into something different. If you prefer to use regular baking potatoes you may be interested to know they don’t count towards your five a day, whilst sweet potatoes do!

Ingredients

1 sweet potato weighing around 200g
2 tsp olive oil
One small onion, finely chopped
1 tsp cumin seeds
1 individual portion (135g) baked beans

1. Bake the sweet potato in a conventional oven or microwave oven until tender.
2. Heat the oil in a small saucepan and fry the onion until softened, then add the cumin seeds. Allow to sizzle for a minute then add the baked beans. Warm through.
3. Cut the sweet potato in half and place on a serving plate. Top with the spiced baked beans.

 

Serving suggestions: Add some chopped lean ham to the baked beans.
