Tortilla wrap with refried beans

A very quick vegetarian lunch which you can carry to work or eat at home. Refried beans, which are spiced pinto beans are available in cans in the Mexican food aisle of the supermarket. Also look out for half fat soured cream which is only 9% fat for a creamy taste without lots of fat.

1 wholemeal or seeded tortilla wrap (average weight 57g)
Half a 215g can refried beans
One medium tomato, sliced
Handful of rocket or watercress
1 tbsp half fat soured cream.

Overview

1. If you like your wrap warmed, heat the tortilla on a griddle or in a microwave oven for a few seconds.
2. Heat the beans gently to just warm through, then spread on the wrap.
3. Add the salad and top with the soured cream. Roll up and cut in half. Serve at once.

 

Serving suggestions: Try with sliced green and red peppers instead of a tomato.

Storage: Wrap well and keep cool if you are taking it with you to work. Eat within a few hours of making.
