Ingredients:

Method:

  1. Mix Beef & Black Bean exante pot meal in a microwavable bowl with 100ml boiling water, cover & microwave for 3 mins. (Check & stir half way)
  2. Add the garlic, chilli & salt and pepper and leave to cool
  3. Add the egg and mix up and make into a burger patty shape
  4. Cook in oven at 180 for 10 minutes until browned & cooked through
  5. In the meantime, peel and cut celeriac into chip shapes and spray with fry light & season (I put some chilli on mine too!)
  6. Cook in centre of hot oven until browned & crispy
  7. Serve burger on a lettuce “bun”, with your fries and some Greek yogurt mayo dip!

Beef & Black Bean Koftas

Ingredients:

Method:

  1. Mix  the Beef & Black Bean exante meal replacement with 100ml boiling water & microwave for 2 mins.
  2. Let it cool
  3. Add egg & all herbs and mix.
  4. Shape the mixture into Koftas
  5. Place in oven and cook at a temperature of 200 degrees until browned (approx. 10mins depending on oven)
  6. Serve with, salad leaves, Greek yogurt and mint dressing.

Beef & Black Bean Seaweed Spring Rolls

Ingredients:

  • 1 x exante Beef & Black Bean Pot Meal
  • ½ tsp Garlic
  • ¼ tsp ginger
  • ½ tsp Chinese 5 spice
  • ½ tsp cumin
  • ½ tsp coriander
  • 50 ml water
  • 25g stir-fry veg with beansprouts
  • 3 x seaweed sheets

Method:

  1. Mix the Beef & Black Bean exante meal replacement in a microwavable bowl 1/2 with 200ml boiling water, cover & microwave for 3 mins. (Check & stir half way)
  2. Add the Garlic, Ginger, cumin, Chinese 5 spice, coriander water & soy sauce to a pan with the stir-fry veg, cook for 3-4 minutes
  3. Add the beef & black bean mix and cook on for another 5 mins
  4. Place seaweed sheet on surface, fill with mixture, roll up and cut in half, repeat until all used up
  5. Serve with coriander fried cauliflower rice and soy sauce to dip!

Beef & Black Bean Chilli

Ingredients:

  • 1 x exante Beef & Black Bean pot meal
  • ½ tsp garlic
  • ½ tsp chilli
  • ½ tsp hot chilli
  • ½ tsp tomato puree
  • 2 x tblsp passata
  • 50 ml water

FOR THE TORTILLAS

  • 1x soup mix
  • 50 ml water

FOR THE CAULIFLOWER RICE

  • 100g cauliflower riced
  • Pinch of garlic
  • Pinch of chilli
  • Fry lite

Method:

  1. Mix Beef & Black Bean exante pot meal in a microwavable bowl 1/2 with 200ml boiling water, cover & microwave for 3 mins. (Check & stir half way)
  2. Add the garlic, chilli powder, hot chilli powder, tomato puree, passata and water to the supplement in a pan and simmer for 3-4 mins
  3. In the meantime, mix soup mix packet with a little water to form a dough ball, roll out between 2 sheets of greaseproof paper until thin and cut into triangles for tortilla chips
  4. Place on oiled baking sheet and spray with fry lite & season with salt, pepper& pinch of chilli
  5. Cook tortilla chips in hot oven (200) until browned – between 8- 12 mins depending on oven
  6. Fry riced cauliflower with pinch chilli and garlic until cooked and serve (maybe with a couple of slices of avocado)

Beef & Black Bean Stir Fry

Ingredients:

  • 1 x exante Beef & Black Bean Pot Meal
  • 50g stir fry veg mix
  • 1 tsp garlic
  • 1 tsp paprika
  • ½ tsp chilli powder (depending on your taste buds)
  • ¼ tsp chinese 5 spice
  • 1 x table spoon soy
  • ¼ tsp cumin

Methods:

  1. Mix the Beef & Black Bean exante meal replacement with 200ml boiling water, cover & microwave to soften.
  2. In the meantime, add 50g stir fry mix to a pan and fry with fry lite, garlic, paprika, soy, cumin, chilli and Chinese 5 spice.
  3. Add the beef & black bean mix to the pan and continue to stir fry.
  4. Serve with Soy and sprinkle on top with sesame seeds.
