Christmas Turkey

All is not lost if you are having a low carb Christmas. Turkey escalopes wrapped in bacon and stuffed with cranberries and walnuts served alongside broccoli and Brussels sprouts, both packed full of immune boosting vitamin C. The addition of cranberries brings heart protecting and cancer fighting antioxidants. This looks and tastes delicious and should keep you in ketosis too. This can be enjoyed on any of our diet solution plans, including the VLCD and LCD diets.

2 thin cut rashers of streaky bacon

100g raw turkey breast escalopes - 1 or 2

15g (4 -5) walnut halves, roughly chopped

15g (8-10) fresh or frozen cranberries, thawed if frozen

Pinch of dried thyme

Black pepper

To serve:

60g tenderstem broccoli

60g Brussels sprouts, trimmed

This recipe is suitable for the following diets: Simple Solution (LCD), Total Solution (VLCD), Working Solution (LCD). 


  • 1.Preheat an oven to 190ºC, (fan oven 170ºC), gas mark 5. 2.
  • 2.The turkey needs to be rolled up, so a thin cut is ideal. You may need to flatten a thick escalope by placing between cling film and tenderising (pounding) briefly with a rolling pin. If you use two small ones just lay them side by side.
  • 3.Cut a square of foil and place on a clean surface. Put the bacon rashers side by side in the middle of the foil and place the turkey escalope on top.
  • 4.In a small bowl mix together the walnuts, cranberries and herbs and season with black pepper. Spoon this onto the middle of the escalope.
  • 5.Roll up the turkey with the bacon to make a parcel. Crunch together the sides and top of the foil and place on a baking sheet.
  • 6.Cook for 20 minutes, then open the top carefully so not to lose the cooking juices. Return to the oven for 10 minutes to allow the bacon to brown a little.
  • 7.Meanwhile steam the Brussels sprouts and broccoli. Serve the turkey and its cooking juices with the green vegetables.
