Mushroom & Spinach Baked Eggs

Quick to make and protein packed, this easy recipe makes a great simple supper that's still low in carbohydrate.

60g (2oz) Mushrooms (any type), chopped
100g (4oz) Fresh Spinach
1 medium egg
1 tbsp reduced fat single cream
1 tsp olive oil
Salt and pepper to season

1.Preheat oven to 200 degrees centigrade/gas mark 6
2. Heat olive oil in a large deep pan, add mushrooms and cook for 1 minute stirring regularly. Add the spinach to the pan and cook until the spinach is wilted. Season with salt and pepper.
3. Put the mixture in a small shallow ovenproof dish, pushing the mixture to the sides to make a well in the middle.
4. Break the egg (carefully as not to break the yoke) into the well and spoon the cream over the egg.
5. Bake in the oven for about 10-12 minutes, or until the egg is just set. Be careful not to overcook as the egg will continue to cook out of the oven.
